A Sweet Winter Treat: Vegan Rhubarb Muffins

For today’s recipe, we’ve taken inspiration from the beautifully simple Vegan Rhubarb Muffins by Thyme & Love. Their recipe highlights rhubarb’s natural balance of sharpness and sweetness, making it a joy to bake with and share.

Vegan Rhubarb Muffins (Serves 12)

Adapted from a beloved seasonal recipe:

Ingredients

• 1 cup almond milk
• 1 tbsp apple cider vinegar
• 2 ¼ cups all-purpose flour
• 1 ½ tsp baking powder
• 1 tsp baking soda
• 1 tsp cinnamon
• ¼ tsp freshly grated nutmeg
• ½ tsp salt
• 1 ¼ cups light brown sugar
• ½ cup melted coconut oil
• 1 tsp vanilla extract
• 2 cups rhubarb, thinly sliced

Crumb Topping

• 1 tbsp vegan butter, room temperature
• ⅓ cup white sugar
• 1 tsp ground cinnamon

Method

1. Preheat the oven to 350°F (180°C) and line your muffin tin.
2. Combine almond milk and apple cider vinegar in a small bowl. Set aside.
3. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and salt.
4. In a larger bowl, beat brown sugar and coconut oil. Stir in vanilla and the milk mixture.
5. Add the dry ingredients and mix until just combined. Fold in rhubarb.
6. In a small bowl, mix butter, sugar and cinnamon for the crumb topping.
7. Spoon batter into muffin cups and sprinkle topping over each.
8. Bake for 20–25 minutes. Let cool slightly before serving.
