Forced Rhubarb: Harvest Time Is Coming

As winter begins to loosen its hold and the promise of spring quietly stirs, one of Britain’s most cherished and fleeting harvests comes into season – forced rhubarb.

Unlike traditional outdoor-grown rhubarb, forced rhubarb is cultivated through a careful, time-honoured process designed to bring the crop to life earlier in the year. After several years of growing outdoors and storing energy in their crowns, rhubarb plants are lifted and transferred indoors to warm, dark forcing sheds. Shielded from light, the plants stretch instinctively upwards in search of it, producing long, slender stalks of vivid pink.

This absence of light halts photosynthesis, preventing bitterness and resulting in rhubarb that is tender, delicately sweet and beautifully aromatic. Harvested from late winter through early spring, forced rhubarb is gently gathered by hand – traditionally by candlelight – preserving both its structure and flavour.
